Project Green Fork is a non-profit, collaborative community initiative that assists Memphis restaurant owners in reducing waste, lowering overhead and decreasing their environmental impact thereby creating a more environmentally sustainable restaurant industry.

PGF certifies restaurants as practicing sustainability based on these six steps:

• Have sustainable products in place

• Set-up recycling program

• Kitchen composting

• Replace toxic cleaners with non-toxic cleaners

• Complete MLGW audit and take necessary steps to reduce energy and water consumption

  1. Pollution Prevention

"I think the environment should be put in the category of our national security. Defense of our
resources is just as important as defense abroad. Otherwise what is there to defend?"

-Robert Redford
